Yummy pancakes

Throughout this whole pregnancy I have totally been in the mood for pancakes. Anyone who knew me growing up will be completely surprised reading that because I never liked pancakes! But I came across this recipe and they are delicious! I make them all the time now and Jared rants and raves over them and even Logan, my picky eater, will almost eat as much as the rest of us! So I thought why not share with everyone else?? Seriously, you should try them out...you won't regret it:) By the way I usually cut the recipe in half since it's just the three of us.
















2 cups (8 1/2 ounces) all-purpose flour
2 1/2 tablespoons (1 3/4 ounces) sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large egg yolks
1 1/4 cups (10 ounces) heavy cream
1 1/4 cups (10 ounces) buttermilk
2 tablespoons (1 ounce) butter, melted
1 teaspoon vanilla extract (optional)

In a medium-sized bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the egg yolks, cream, buttermilk, melted butter, and vanilla. Whisk the wet ingredients into the dry, just until combined.

Preheat and lightly grease (I didn't grease my griddle and they didn't stick) a heavy skillet or griddle. Scoop the batter onto the griddle with a 1/4 cup measure or a large spoon. Make sure the heat is slightly less than medium. The pancakes will puff up very high. When the first side is golden brown and the edges start to look dry, turn the pancakes over to finish cooking the second side. Remove the pancakes from the griddle and keep them in a warm serving dish until you have enough to feed everyone.


FYI - I got this recipe straight from mykitchencafe.blogspot.com. It is one of my favorite recipe blogs. I cook stuff from there all the time and have never been disappointed!

On a side note, we stopped letting Logan have his binky during the day a few months ago but would let him have it when he slept (don't judge!). I have been dreading taking it away from him at night because I thought putting him to sleep would be a nightmare and that he would wake up a lot during the night. But last night, I got motivated and cut off the end of the binky so that he could barely suck on it anymore. I gave it to Logan and he spit it out like "what is wrong with it?!". I told him it was broken and to say "bye-bye". It was so cute to hear him say "binkie boken - bye bye!" So last night he went to bed without it and slept great and tonight he went to bed without it again. Man, if this lasts I can't believe how easy it was. I was seriously dreading this for so long and will be so glad if this is it! No more binky!! (Hopefully this new little girl isn't a binky lover or we might have some problems with having "un-broken" binkies around!)
